TGIF



Hey, friends!
Has it already been a week since I last did a TGIF post? Wow.
This week was...cold! And I loved it. LSU kept us on edge all Wednesday night waiting to see if they would close school Thursday due to a "Winter Storm Warning." They didn't, even though practically every other school in the state did. I was ok with it though. I had a paper and homework due which I was eager to get off my hands! We did, however, get today off. We were supposed to get freezing rain and possibly snow. If we got either of those, I must have been asleep and missed it.




This week was also filled with great food! If you didn't know already, I'm vegan -- well on most days. And what I mean by that is: I started a vegan diet to lose weight three years ago. I didn't cheat ONCE (not a single bite of anything non organic, dairy, or animal product) and lost about 40 lbs. in 5 months! It was definitely a life change. Unfortunately, Baton Rouge doesn't have much to offer to us vegans, and I live about 40 minutes away from the closest Whole Foods. After that 5 months and 40 lbs., I stopped being so strict with my diet. I go through stages of doing REALLY well, and not very well at all. I've never cheated on meat though! But sometimes when I go out to eat, I don't ask the waiter the 100 questions it takes to figure out what they're cooking your food with. I try as best as possible, but sometimes I just don't worry with the ounce of dairy that might be in my cooked with my steamed veggies at dinner. Anyway, this week I tried out a few recipes I found on the Oh She Glows blog and they were...AMAZING! Ok, well I cooked the bell peppers and zucchini and Luke did the macaroni and cheese. There is also one precious little cafe downtown that is completely dairy and gluten free and offer a bunch of options for those with a strict dietary condition. That picture in the middle is of their dairy free Whoopi Pie, or "Snooki Pie" as Luke likes to call it. YUM!

This weekend is full of studying, school projects, and a bridal shower. My church is having our normally night service on Sunday morning because of the Super Bowl, so I'm excited to go to church early for a change. I love our night service, but doing the morning thing is fun. Might even get all fancy. ;)

I definitely need to check out that restaurant! How cool! I adopted a vegan lifestyle for a year, and l-o-v-e-d it. I kept it a secret as best I could, because I couldn't stand questions and other people giving me their opinion on my protein consumption. Haha! The only reason I gradually got more lenient is because I don't like to explain anything, and I hated people finding out and making a fuss over me! So not my style. I still don't drink milk and don't care for meat. I dream of moving out and keeping a vegan kitchen:) I've got some awesome raw&vegan cook books if you want to borrow them sometime!

I follow a pescatarian diet but occasionally cheat when we go out to a nice restaurant and just have a nibble from hubby's plate. I'm usually quickly reminded that I don't even like it anymore!
